Oven glass goes brown in two different places, and they need different methods: the film on the inside face is baked-on grease, while the stain between the panes is vapour that condensed there because the door seal stopped sealing. Treating both with the same bottle is how doors get scratched.
Two jobs, two methods
Clean the inner glass with a caustic or non-caustic oven cleaner and dwell time, then scrape with a blade only if the film has carbonised. The glass between the panes cannot be cleaned from inside the oven at all — that glass has to be removed from the door, which is a disassembly job.

Caustic or non-caustic?
Caustic oven cleaners contain sodium hydroxide, which saponifies baked-on fat. They work fast and they attack aluminium, painted surfaces and skin. Non-caustic products rely on surfactants and longer dwell time; they are safer on mixed surfaces and slower on heavy carbon.

The method for the inner glass
- Warm the oven slightly — 50 °C, not hot — then switch it off. Warm glass lets the cleaner work; hot glass can crack under a cold application.
- Apply the cleaner to the glass and the inner door surface. Keep it off the door seal, the hinges and any painted panel edge.
- Leave it for the dwell time on the label. Ten minutes is a common minimum; heavy carbon needs twenty.
- Wipe with a damp cloth, then use a plastic scraper for the remaining film. A metal blade on oven glass is how doors get permanent scratches.
- Rinse twice with clean water. Residue left on the glass browns again at the next bake and looks like the original stain.
The glass between the panes
If you can see a stain that is behind the outer pane, it got there as vapour through a failed seal, and no product applied from inside the oven will reach it. On most domestic ovens the door can be unclipped from its hinges and the inner pane lifted out; on commercial ranges this is a service task, and the seal usually needs replacing at the same time, otherwise the stain returns.
Two practical warnings: door glass is not toughened the same way as the oven cavity glass and can fail from thermal shock, and the door assembly is heavy. If the door does not come apart easily, stop.
Doing it in a commercial kitchen
The method changes with scale. Oven and range cleaning in a production kitchen is a scheduled task with a chemical that suits the surface, a P2 respirator if the product is caustic, and a rinse step that is documented rather than assumed. Three things not to do to an oven door
- Do not spray cleaner into the hinge slots or the door seal. Caustic residue there corrodes the hinge and hardens the seal, and the door then leaks vapour — which is how the glass between the panes gets stained in the first place.
- Do not use an abrasive pad on the outer panel. Oven doors are usually coated steel or glass; a cream cleanser or a scouring pad leaves a dull patch that no polish removes.
- Do not close the door while the cleaner is still on the glass. Residual caustic bakes into a brown film at the next use, and you are back where you started with less product and more time.
